“Unstuffed” Pepper Rice Bowl

Enjoy all of the flavors of stuffed peppers, without the prep time or long bake time.

Ingredients

  • 1 cup white or brown rice

  • 2 tablespoons olive oil, divided

  • 1 pound turkey or chicken sausage, removed from casing if necessary

  • 1 shallot, minced

  • 2-4 cloves garlic, minced

  • 3 red, yellow or orange peppers, diced

  • 1 can white beans, drained and rinsed

  • 1/2 cup pesto, divided

  • 1/4 parmesan cheese

  • Fresh cracked pepper (to taste)

  • Salt (to taste)

  • Juice of 1 lemon (optional)

Directions

  • Prepare rice according to package instructions.

  • Place a large frying pan over medium heat. Add 1 tablespoon of olive oil to heated pan. Add sausage to the pan to brown. Break up the sausage into small pieces with a spoon. Once cooked, remove from pan and set aside.

  • Add the other tablespoon to the pan. Add shallots and garlic and sauté until shallots are translucent. Add peppers to the pan and sauté for 5 minutes, stirring occasionally. Add white beans to the pan. Season with salt and pepper.

  • Add the turkey sausage and the rice to the pan and stir to combine.

  • If you’re using the lemon juice, add and stir into the mixture.

  • Add 1/3 cup of the pesto to the pan and stir to combine. Reserve the rest of the pesto for serving.

  • Spoon mixture into a bowl, top with pesto and parmesan cheese and enjoy!
